Happy Thanksgiving, Dama! The Akathist of Thanksgiving is indeed lovely. A very simple way to serve an Akathist service is this:
Through the prayers of our Holy Fathers, O Lord Jesus Christ our God, have mercy on us and save us. Amen. Glory to Thee, our God, Glory to Thee. O Heavenly King... through the Lord's Prayer. Lord have mercy (12) Glory now and ever. O come let us worship (3, with the variations). Psalm 50 and the Creed, if you want.
Akathist. You have it all laid out here the way it should be done. Chant on a flat tone (like reading in church) or just read, the Kontakia, and the beginning of the Ikoi (before the Glory to Thee part). Here is some music that is a simplified version of the basic Akathist chant. http://www.oca.org/PDF/Music/Akathists/Sitka/Sitka-Oikos3.pdf I don't know how good you are with that (I think I remember you read music). But if you want to sing, and can modify fairly easily, it might help. (The music isn't for the same Akathist, sorry about that). It also has the music for the Alleluias at the end of the Kontakia.
When you finish the Akathist (repeating the first Kontakion), sing or say It is truly meet, and then Holy God through the Lord's Prayer. Then Lord have mercy (3), Glory now and ever, More honorable than the Cherubim, and Through the prayers of our holy fathers (the same blessing you began with).
People usually sing the first Kontakion, to a melody related to this akathist, but I can't find music, and it would involve more altering, anyway. You can make it up, or not worry about it.
