I'm making calzones for dinner. Tomato and pesto (with a little cheese). Homemade dough. They are so very yummy.

My FIL is coming tonight. He goes to Norfolk for business stuff every once in awhile, and flies into Baltimore, so it isn't too much of a stretch for him to come here and just add a day or two to his trip. This is the second time he's done it. He'll be here until Sunday afternoon. The girls are very excited. I always feel that I must do extra cleaning when people come to visit. My house is not filthy these days, so I don't know why I feel like we have to clean like maniacs when anyone come over.

Tomorrow is the Army/Navy football game. Brad has invited another couple over to watch it. The guy is a classmate of Brad's from Westpoint we saw at the reunion and discovered that he and his wife live pretty close to us. I don't know his wife at all, but it will be fine I'm sure.

Zoe has a really nasty ear infection. Inner and outer ear. Poor thing is in a lot of pain and on antibiotics. I think the outer ear canal infection was caused by her digging at it when the inner ear infection started. She wouldn't leave it alone. She hasn't had a fever or seemed too out of it except for some complaining about pain. This is third day of the antibiotics and she seems really run down today and not feeling well. I hope it gets better soon. I called the nurse and they had me bring her in again this morning because her ear was draining some seriously gross stuff, but the nurse we saw said it was normal, just painful and yucky. I feel so bad for that child and her ears. I thought maybe we'd make it through this cold without anyone getting an infection, but no such luck. Actually, when I took Zoe in on Wednesday initially, I took Mari too because she'd been complaining of ear pain for several days also and had obviously not been hearing as well out of one of her ears. According to the ped we saw, Mari HAD an infection but it was clearing up on its own. That child has a monster immune system. I wish she could share some of that with Zoe.

Brad came home right after class today, which meant he was home right at lunch time. He is cleaning my kitchen for me right now. I have lots of warm fuzzies for him lately. He has been spending SO MUCH TIME with the girls and been so much more patient that he used to be and being kind and affectionate and just...well...HERE all the time. I'm trying really hard to just enjoy it for what it is right now and not wonder or worry about the future. Do you know how hard that is? I don't know how to pray about the future anymore. I don't want to think about the next assignment or possiblities of deployment or moving overseas. I don't want to think about the struggle of a marriage under stress. I just want to be right here, right now, in this utopian moment. I'm not very good at that though...

I know what you mean about the house being cleaner these days--it's nice when you move, and start over.

And I know EXACTLY what you mean about the marriage under stress. I keep waiting for the fighting, the passive aggressive snippityness, something. But it's not happening. On one hand I am loving it...waiting for that heavy old shoe to drop, even when it might not, is such a pisser, though. I'm not too good at the right here, right now stuff all the time, either. Not when it comes to marriage, anyway; maybe moreso with the kids.

Anyway, I commiserate. Now make with the recipe ;)

The recipe is from the New Moosewood Cookbook. Pretty simple.

The Dough:
1 C wrist-temp water
1 1/2 tsp active dry yeast
1 Tbs honey or sugar
1 1/2 tsp salt
2 1/2 to 3 C flour
olive oil

Place the water in a medium sized bowl. Sprinkle in the yeast, and stir in the honey or sugar until everything dissolves. Use a whisk to stir in the salt and flour. When it gets too thick to whisk, mix with one floured hand. Knead in the bowl for about 5 minutes. Brush a little olive oil over the dough, cover the bowl and let rise in a warm place until doubled in bulk (about 1 hour). In the meantime, you can get the filling ready.

My filling is just a spoonful of basil pesto (I buy a jared pesto), sliced tomatoes, and mozz. cheese. But you can fill them with anything you want.

To Assemble:
Preheat oven to 450 degrees. Oil a baking tray. Pinch down the risen dough. Divide it into 6 equal sections and roll out on a floured surface into circles 1/4 inch thick. Place filling on one half of the circle leaving a 1/2 inch rim. Use your finters or a brush to moisten the rim with a little water. Fold over the empty side and crimp the edges with your favorite fork. Use that same fork to prick little holes here and there on the top surface. Arrange the completed calzones on the oiled tray and bake for 15 to 20 minutes or until crisp and lightly browned. OPTIONAL: You can brush each pastry with a little melted butter or some olive oil during the last 5 minutes of baking. Serve hot.

I like to serve with a little bowl of marinara sauce for dipping and a green salad.

Hehe! Isn't that funny? The Moosewood Cookbook is hilarious like that. She throws in all kinds of homey little things. I just typed it straight out of the book.

Yes, she is on Motrin. And it helps. But, man, I can sure tell when it is wearing off!
