I just used Pamala's gluten free baking mix to make cupcakes with coconut milk. So dairy free as well (although I did use a couple of eggs, eggs hidden in things don't seem to bother Luci, I guess she doesn't get much or something). Frosting is also dairy free (used coconut oil and coconut milk with gluten free powdered sugar and gluten free vanilla). They taste really good. I'm super duper proud of myself, I just want you to know. So far the only thing I successfully made gluten free that anyone would eat was pancakes. Oh and brownies. Cake is a big step forward. I simply must figure out the bread thing next. Now at least I won't stress about birthday cakes anymore. Not that there are any birthdays coming up in our house, but now I know that if we get invited to parties, I can make these cupcakes and bring one for Luci and she won't "miss out" on the cake fun.

That is awesome! I wish I was there to eat one right now. Truly I do...cupcakes...Oh my gosh ETL is making me want to stab myself in the eye!! I cannot wait to have the excuse of Elise's birthday cake!

I had no idea vanilla or powdered sugar contained gluten. That is sort of how gluten is though (present in everything you never imagined).

This is funny. I Just read an article tonight debunking the gluten in vanilla and other liquors myth. I'm glad! It is one less thing to worry about!
